Strawberry Muffins by Lili Forberg
These moreish muffins by Lili Forberg are perfect as lunchbox fillers or picnics in the park!
Serves 12|Takes 30
INGREDIENTS:
150g of Self Raising Flour
100g Flahavan’s Organic Porridge Oats
1 tsp. of Baking Soda
1 tsp. of Baking Powder
80ml of Olive Oil
70g of Brown Sugar
1 Egg
1 tsp. of Vanilla Essence
250g of Natural Yogurt
170g of Chopped Strawberries
METHOD:
Mix all ingredients in one bowl keeping the strawberries until last.
Grease a muffin tray or papers.
If you’re using silicone muffin moulds you don’t need to grease them.
Sprinkle some oats on top.
Bake on 180° for 20-22 mins
