Perfect Peach Porridge by @ClareAnneOK
Peaches and cream-y porridge...a fab option for a weekend breakfast with a fruity twist!
Serves 2|Takes 15 mins
INGREDIENTS:
80g Flahavan’s Progress Oatlets
200ml Water
300ml Flahavan’s Organic Oat Drink
Pinch of Sea Salt
One Small Peach
1tsp Light Olive Oil
1 tbsp seed mix
50g Raspberries
1 tbsp Honey and 2 x Chunks of Irish Honeycomb
METHOD:
Pour oats into a small cast iron saucepan. Add 200ml water, stir and leave to stand for 2-5 minutes. Place on the hob and bring to the boil, then immediately reduce to a simmer. Add the pinch of salt and the Oat Drink, then continue to simmer for 3 minutes until creamy and thickened. Divide between two bowls.
Heat a ridged griddle pan over medium flame, then toast seeds for two minutes and pour onto a plate to cool. Slice the peach into 2cm thick slices then brush with olive oil and place on griddle (the trick is not to move them around), so place them on the griddle then don’t move for 1 minute, then flip over for a further minute. Remove from the griddle with spatula, then pile on top of the creamy porridge with seeds, raspberries and tip with drizzled honey and a chunk of the honeycomb.
Top Tip: The griddled peach is great cold, so you can prep this topping the night before!
