Lime & Almond Energy Balls

A zesty snack to fuel your day

Serves 25|Takes 15 minutes

INGREDIENTS:

100g (4oz) Flahavan’s Progress Oatlets
100g (4oz) cashew nuts
50g (2oz) Oat Bran
200g (8oz) pitted dates
50g (2oz) ground almonds
Juice and zest of 2 limes
2 tbsp desiccated coconut/ matcha green tea (for coating)

METHOD:

Blitz the oats and cashews in the food processor.
Add the remaining ingredients to the food processor and blitz until you have a sticky paste.
Use your hands to shape the mixture into bite size balls.
Spread the coating ingredient of choice on a plate, roll each ball in it.
Store in an airtight container in the fridge for up to one week.
