Ham & Cheddar Muffins by Lili Forberg

These muffins by Lili are the perfect lunchbox fillers!

Serves 12|Takes 25 minutes

INGREDIENTS:

225g of self raising flour
50g of Flahavan’s Progress Oatlets
1 tsp. of baking soda
1 tsp. of baking powder
60 ml of olive oil
2 eggs
250g of natural yogurt
120g of grated cheddar
120g of chopped ham
1/2 tsp. of salt

METHOD:

Mix all ingredients leaving ham and cheese till last. Grease a muffin tray or use baking sheet papers. If you’re using silicone muffin moulds you don’t need to grease them. Divide evenly, sprinkle some cheese on top and bake on 180° for 16 mins
