Banana & Blueberry Muffins by Lili Forberg
We've teamed up with Lili Forberg and her little helper to make these quick and tasty oat muffins!
Serves 12|Takes 30 minutes
INGREDIENTS:
2 ripe bananas
1 cup (or 230 g) of natural yogurt
1 egg
2 cups (or 200 g) of oats
1 1/2 tsp of baking powder
1/2 tsp of baking soda
1/3 cup (or 50 g) of brown sugar
1/3 cup (or 30g) of desiccated coconut
1 tsp of vanilla essence
1 cup (or 100g) of blueberries
(Optional) Chocolate chips for topping
METHOD:
Mix all the ingredients together in a mixing bowl.
Grease the paper or muffin tin as this recipe has no oil or butter.
Oven bake on 190° for 20 mins.
