Apple & Pecan Porridge by Donal Skehan
Everyone needs a classic porridge recipe with only a few ingredients.
Serves 2|Takes 10 minutes
INGREDIENTS:
125g Flahavan’s Progress Oats
250ml milk + a little extra to serve
1⁄2 tsp cinnamon
Pinch of salt
1 apple
1 tbsp dark brown muscavado sugar
Handful toasted pecans, roughly chopped
METHOD:
Add the porridge oats and milk to a small saucepan and place on a medium-high heat. Bring to the boil, then turn off the heat.
Add the cinnamon and a pinch of salt and stir consistently until you have a thick, creamy mixture, this will take roughly 8-10minutes.
Grate the apple and stir half of it into the porridge. Serve the porridge in a bowl, sprinkle over the dark brown sugar, then top it with the rest of the grated apple, the pecans and some more cinnamon.

“Everyone needs a classic porridge recipe with only a few ingredients. This one brings basic porridge to a whole new level, the pecans add a lovely crunch to the top but can easily be replaced with roasted hazelnuts. The apple adds a lovely sweetness and texture to the porridge and the addition of that lovely bit of brown sugar on top adds a lovely glaze to the top of the porridge as it melts once it hits the surface.”
